UML (Visio) Diagram Update

Description

Based on the v5.1 release updates update the UML Visio diagram. 

  • Student Health model updates

  • Crisis Event model updates

  • Transportation model updates

Note: Mark the HispanicLatinoEtnicity as "Deprecated" in the Staff and StudentEducationOrganizationAssociation entities in StudentIdendicationDemographics and Staff domains.

And create a PR to include the new Visio diagram in the GitHub.

Need to discuss with the whole team how CrisisEvent is related to StudentEdOrgAssociation. Putting this ticket on the blocked lane for now.
